Amar- el- Deen is made of apricot nectar and rosewater. It is a very popular during the months of Ramadan, and frankly if it was missing from the table during iftar ( the time at which you break your fast) people would be very confused. Amar- el- deen is made with apricots that are dried, made into a paste, rolled into sheets and wrapped. That is called amar-el-deen, most people will just buy from the grocery story as it is very difficult to make at home and tastes the same way regardless. When mixed with rose water (or just regular water as rose water is not always available) it becomes a rich drink. Amar -el- deen is not just restricted to a drink, it can be made in a milk pudding, used in tarts or eaten like fruit roll up. It is a very important part of Egyptian culture and I hope you like it! Ingredients:
1 package amar-el-deen paste, approx 500g/1lb
4 cups water
1/2 cup sugar
1+ tsp rosewater, to taste
Handful of pine nuts, soaked approx 1 hour or until softened
Mint, for garnish
Directions:
Tear the amar-el-deen paste into small pieces and soak in 2 cups of the water in the fridge overnight.

Directions:
Tear the amar-el-deen paste into small pieces and soak in 2 cups of the water in the fridge overnight.
In a small saucepan, heat the ½ cup sugar and remaining 2 cups water, stirring until the sugar dissolves. Place the amardeen/water and sugar mixtures into a food processor, and blend until smooth. Add the rosewater 1tsp at a time, to taste. Serve warm or cold (my preference) topped with the pine nuts and a sprig of mint.
