This is perhaps one of the oldest foods of Egypt. Fool used to be restricted to poor people because it was cheap, easy to make and it also made you very full due to how hearty it is. Nowadays it is a staple for breakfast and occasionally brunch. Before the invention of canned food, you had to make it from scratch using dried fava beans. Fortunately it is now much easier to make due to the fact that you can buy prepared and pureed fava beans from the nearest middle eastern grocery store. In Egypt this food is very popular among teenagers; the fool sandwich, bought from one of the various food stands, is the equivalent of a mcdonalds big mac. Although, it is much healthier because fool is a great source of protein, carbs and dietary fiber. The possibilities for this dish are endless due to it's versatility. Ingredients:
1 can prepared fava beans, puréed
1/2 cup water
Juice of 1 lemon
1 Tbs white vinegar
2 Tbs olive oil
3 minced garlic
1/2 tsp salt
1/4 tsp pepper
A variety of vegetables, one of each to taste: bell peppers in different colors, tomatoes & a red onions
6 Pita Bread, quartered.
Directions:
1. Over medium heat, add the fava beans in a saucepan with the water, lemon, vinegar, oil, & garlic and bring to a boil.
2. Add all the spices. Mix well and let it simmer on low heat for 10 minutes.
3. Remove from heat and let it cool.
4. Cut all the vegetables in uniform shapes, like 1/2 inch or 3 cm squares.
